Ingredients 3 large beetroot 2 celery stalk 75g uncooked puy lentils 25g walnuts 25g sunflower seeds 50g dates 100g leaf Vinaigrette - 1tsp Dijon mustard 50ml olive oil 1 tsp white wine vinegar or ACV Juice 1 lemon 1 clove garlic finely chopped Pinch salt 1. Turn oven onto 200 degrees 2. Wash beetroot, chop off ends and cut into half moon segments. Roast in oven for 30 mins 3. Finely chop celery 4. Soak dates in hot water for 10 minutes and chop into small chunks (or use scissors) 5. Toast seeds and nuts for 10 minutes in oven 6. Mix the ingredients for the vinaigrette 7. Mix together with the vinaigrette except the seeds 8. Finish by sprinkling sunflower seeds ENJOY! X
